Peanut skin (the thin, red-brown seed coat) is highly nutritious, packed with antioxidants, fiber, and polyphenols. Often discarded, this layer contains roughly 13–21% protein, 15–45% fiber, and significant antioxidant levels comparable to green tea. It is a potent source of resveratrol and procyanidins, and exceeds the antioxidant capacity of the peanut kernel itself. While the peanut kernel (seed) is rich in healthy fats and protein, the skin provides high levels of dietary fiber, phenolic compounds, and minerals.
